Forgive my ignorance.........

It has been years...YEARS!...since I was last at WDW (pre-chips in drink cups)....

IF I wanted to fill a small cooler (or water bottle) with ice/ice chips before park departure, would I be locked-out...timed-out...by the sensor if I never actually poured a beverage (just ice).

Just planning waaaaaaay ahead.

Sensor readers are under each of the fountain drinks, not under the ice dispenser, so you should be good to go.

There's also ice machines in the buildings (if memory serves me, usually near the elevators)

You should be fine. I use my travel mug to get hot water for my tea, so I expect you could get ice.

If you want to fill a Cooler,I would go with the Ice Machines.

Every resort I've stayed at has several ice only machines in the food court, plus more throughout the resort. If I may suggest using the ones throughout the resort to fill a cooler (if you're not consuming the ice). The ice machines in the food court take a while to refill the ice. Just a suggestion.

At least some (maybe all) of the resorts have a water only dispenser, too, in addition to the pop dispenser water button, near the ice machine, but I always fill my water bottle up all the way with ice. By the time I make it to the bus stop it has already started melting.
