At Islands of Adventure, Spiderman is not to be missed. The three water rides are great if you don't mind getting soaked (although you don't get completely drenched on Jurrassic Park. The Cat in the Hat is really cute, and I was surprised by how much I enjoyed the trolley ride in Suess Island.
At Universal Studios, MIB is great, and so is the Simpsons ride.
Also, don't worry about things really being a "coaster" if you can't see it. For example, a lot of guests think Spiderman (or MIB, Simpsons, Disaster, even Poseidon't Fury) is a Coaster because of the way its warning sign is written, but they can't see it so they assume it's a coaster. If it looks like a roller coaster, it is a roller coaster, except for Mummy, which is an indoor roller coaster.

The Mummy is pretty intense and does have the odd scary moment. Jaws is a bit tongue-in-cheek but, again, has a couple of bits that do make you jump.
Having said that, my squeamish 6 year old has done both and was absolutely fine, although he didn't like the Mummy but that was more due to going backwards.
