any tips on dinners that we can cook in the room that would be easy and healthy? We will have a car on our upcoming stay, and would like to eat some dinners in the villa, using the kitchen (;) well, kind of using the kitchen - I do not want to spend alot of time cooking on vacation! ) Salads and sandwiches come to mind, but there may be better ideas! Thanks!
 
We have done chicken parm with linguine noodles. Easy enough to make. Other easy things are tacos, spaghetti w/ garlic bread and salad, frozen pizza, baked chicken w/mashed potatoes, gravy and veg, sloppy joes. Or what about those Stouffer's Skillet Sensations. They have different chicken and beef varieties. I think these are all relatively easy to make.
 
Most people will say speghetti because it is quick and easy. Another one would be buy chicken that is already breaded, get a jar of sauce and shredded mozzarella cheese and make chicken parm. Add a bagged salad and Italian bread and you have a nice meal. The prep is easy, but the clean up could be bad, make sure you have cooking spray, it will make clean up easier.
 
There are dishwashers in the villas. We cooked our c.p. in the 13X9 glass baking dish. Just rinsed it our and stuffed it in the dw.
 

If you can bring a slow cooker you can make of of our favorites - Beef Brisket. This will provide us with 2 meals in one stop. Hot beef dinner, mash potatoe, salad ... the first night and sandwiches the next day. We usually add some B-B-Que sauce the next day for a real change of tast and it makes a great hot sandwich. I start the beef cooking on low just before we leave for the park and my the time we get back, it's done. Add the veggies to the pot in the morning for a pot roast type meal, wonderful. Try any of your slow cooker meals for quick home cook meal.

Easy, yes, healthy....depends which food fad you're into to define that! :cool2:

When looking for 'fast, cheap and easy' meals, we do the same thing we'd do when we're cooking at home, though for us I'd rather make a good meal and since I'm on vacation, I actually have the time to do so. If you plan on grocery shopping while in the World, buy the same stuff you'd buy if you were shopping at home for fast dinners. For us, that's frozen meals in a bag, that fake-cheesy macaroni and cheese, rice-a-roni/noodles and sauce and we'll either add a can of canned chicken to mix in or pick up some steaks and broil them while the other stuff cooks.

Most stores in the area have a prepared food section. We usually buy things there and heat and serve. The selections are getting quite extensive.

On one of our recent trips we were travelling with a big group staying in a grand villa. We froze and packaged a big batch of my moms spaghetti sauce, meatballs and sausages in ziplock bags, wrapped in newspaper, and stuffed into insulated thermal bags. We packed them in our suitcase and they stayed there from afternoon on Saturday until we checked into our villa on Sunday at 4:00 (we stayed overnight Saturday night at a hotel at the airport because our flight was first thing Sunday morning). We were afraid that they wouldn't stay cold, but they were fine. That made for a delicious and easy home cooked meal.

Thnks for all of the great suggestions! I did not know that Giordano's was nearby - we used to live in Chicago and loved it! The link was a big help, too. Does anyone know good grocery stores for prepared foods?

I just pm'd you with 3 recipes that I usually make in the villas- kids love em, easy to prep and clean up. My fave is the Puttanesca- nice loaf of bread, salad and a bottle of chianti!

We used to get prepared food at the Super Walmart. Since then, some new and great supermarkets have opened closer to the resorts. I would imagine that they too would have a nice selection of prepared foods.
