I'm sorry you and your family became sick while at WDW but unless they received multiple complaints of being sick and eating at the same restaurant during the same time frame, it's going to be very difficult to prove it was food poisoning. One of the ways it is diagnosed is through testing the food or stool samples. They can't very well obtain them at this point.
Sounds like you all had a case of Gastroenteritis which can spread quickly between family members, or people traveling together.
As far as the bathrooms being closed, of our 10 times at WDW, I've rarely, if ever, seen a bathroom closed. I agree that CM's should know how to direct you to the nearest bathroom, but other than that, I really don't see what they can do for you at this point, after all it happened way back in November. Those people who misdirected you may not even be working there anymore.
You're more than welcome to send them your complaint, but really, what do you expect Disney to do for you?
