Food planning ideas for budget minded campers?

Our last trip I made the following and froze it:

3 qts of sloppy joes
15# of grilled chicken breast
3 beef roast (one whole, one shredded for sandwiches, one in gravy for hot sandwiches.
2 qts of pulled BBQ chicken
2qts of pulled BBQ pork

I was surprised how many meals we got out of this. With 2 teenagers it can go quickly. This was on top of the hot dogs and hamburgers we also brought.

Definitely! And if you plan on making s'mores at the campfire, make sure you bring your supplies with you. You can purchase s'mores kits at the campfire and the makings for them at the trading posts, but at Disney prices. :) It's much more economical to bring them from home.

I am LOVING this thread. I'm also taking notes for our trip in December. Our traditional fifteen days holiday at the Fort and I can't wait! :banana:
 
OP here - oh yes, i am adding my smores stuff to my list right now. i also am planning on bringing hot dogs and fixen's in my little picnic basket along with our retractable camp forks for the campfire. (the one at the sing along) i asked here about that before and the general agreement was that it can and has been done. i might even pack our cast iron campfire sandwich press. (i won't repeat the name of the peanut butter/marshmellow cream sandwiches we want to make - they almost got me banned last time.:rotfl2: :rotfl2:)

OP- you asked if it would be too hot for shepard's pie....If you have air-condition in your camper then I say go for it! It's one of our fav easy meals that I just made easier:rolleyes1 ....Last week I didn't feel like making mashed potatoes so I nuked red-skin potatoes and then smashed them with a fork and topped the meat with that. I never put my pie in the oven my family will need therapy.

what's cowboy spaghetti? how do you make it? and also the 2x baked potatos....how do you do those? I'm camping this summer,and getting more ideas..
 
kitamom, would you be willing to share the recipe for those twice baked potatoes? I've never made them but DH always orders them from a local rest. and just loves them. And, how do you freeze them and how do you recommend reheating them?

I think they could be a big hit among my crew. I'd be willing do the work before hand, if they are good and easy to reheat. Thanks! :goodvibes

Here it is sorry it took me so long to answer. I have had a busy week. I am one of those people that cook by looks. I jusy add until it looks good.

Twice Baked Potatoes

5 or 6 Large Baking Potatoes
¾ to 1 pint of sour cream
1 to 1 ½ sticks of butter or margarine
Chives
Bacon bits
2 cups of Cheddar or Colby shredded cheese

Wash potatoes and pat dry, coat the skins of the potatoes with Crisco (the Crisco will make the skins crisp). Bake potatoes directly on oven rack at 350 for 1 ½ hours. Turn the potatoes over after about 45 min.

Do not wrap the potatoes in foil this will make the skin soft and hard to scoop out or refill.

Cut the potatoes in half lengthwise and scoop them out (each potato will make two twice baked). Be careful the inside is very hot. I put the butter in the bottom of a large mixing bowl the hot potatoes this helps to melt the butter. Place the skins on a baking sheet and set aside.

Use a mixer and mix in the sour cream. The mixture will be like mashed potatoes. Then stir in by hand the chives, bacon bits and cheese.

Refill the skins with the potato mixture.

Place the cookie sheet with the potatoes in the freezer. Once they are frozen I place them in a large zip-lock freezer bag. They will keep for several weeks in the freezer. That is why I make so many at once.

To reheat you can put them over the grill, bake in the oven, or use microwave (not the best, put will do in a pinch). I place them on a baking sheet or pie pan when I reheat them.

I am waiting on the potatoes to get done in the oven now. Hubby want's them for dinner. So I will freeze the rest for the trip. They are always a hit on the road.

Peanut Butter and Fluff, YUMMY!!!!!

note to those not in the know...that is marshmellow fluff. and yes, YUMMY is the best way to sum it up. if you think it rocks on regular old white bread you should try it toased....(in those cast iron campfire sandwich irons.....OH MAN.)

You just cant go wrong with sloppy joes. They freeze well.
