a Mexican fiesta night might be inexpensive and fun. The veggies can be cut up and the groundbeef made up ahead of time and you can stretch it by having chips, rice and a couple of cans of black beans or refried beans with it.
a big pot of spaghetti sauce with browned Italian sausage links dumped in can be made ahead of time and then you could have it over pasta and/or the sausage can be pulled out for sandwiches.
those cheap boxes of Zataran's are pretty good with some cut up cooked smoked sausage or chicken thrown in with some yummy crusty bread.
