I have been searching through food threads but didn't find any information so any information you guys can give me would be great. I am a picky eater and was wondering at table services if you can do the typical exchange a vegetable/starch for a different vegetable/starch? Also wondering if you order say a prime rib and it states that they place it in some kind of special sauce can you do like most restaurants and order it with the sauce on the side instead? Thanks!

Restaurants are very accomodating of substitutions and minor modifications like leaving off sauces or sauces on the side. Note that the substitutions that are allowed are typically something listed as a side on one meal for something listed as a side on another meal. I've read threads started by people who were upset that something listed as an appetizer wasn't allowed as a substitution for a side because the items were things that are often considered sides (one example that comes to mind is onion rings at 50s PTC). Subbing something like rice for potatoes is pretty commonly permitted.

The only exception on the sides substitutions is the chef's fixed menu (or whatever each restaurant calls it). I'm referring to the menu that has a fixed price for a choice from a small selection of appetizers, entrees and desserts. Restaurants do not allow ANY substitutions when ordering from this menu. They're very strict about this.

It's almost always to request no sauce or sauce on the side. Side items can sometimes be changed and sometimes not. When a location has separate items they sell as side dishes you usually can't sub that for the side that comes with the meal. Usually they will do the best they can but if they are running low they may not be able to switch. I know in the past Coral Reef often had an issue with subbing baked potato because they would run out for the meal they went with but I don't think baked potato is even still on their menu now.

Yes, Disney will honor any special food requests. Tons of times people will substitute different kinds of potatos (you can see a lot of that on the food porn thread). Last time I was at 50s prime time my dinner came with collared greens (which I didn't want at all) so I asked to sub them for something else and I got green beens instead. And you can always ask for sauce on the side. Disney is really great about it.

If the side you want to switch to is offered as a side on another entree, you will most likely be fine in switching. However, if it is a side that is listed separately on the menu, then you most likely will NOT be able to exchange for it.

You should be able to get any sauces or dressings on the side.

I would amend this a bit. Disney will honor MOST (not any) food requests. As others have said, you can usually substitute one side include with an entree, for a side included with a different entree. But if they have sides for an extra cost on the menu, they will not substitute that side for an included one. (Onion rings at 50's example)
Sauces can be requested on the side, unless they are cooked together - like a Pot Roast for example.
Enjoy!

Thanks everyone for your help. Makes me feel so much better now for our trip in 13 days.

There are a few exceptions to this. I don't care for white potatoes. Unfortuantely potatoes are normally the side of choice for steak entrees. At Yachtsman I've always been able to substitute the mushrooms listed at the bottom of the menu under 'Sides'. I've also been able to do it everytime at Artist Point. I always get their sweet potatoes listed at the bottom of the menu in place of the side that comes with my entree. I agree though that most restaurants will not allow you to substitute one of the special sides listed at the bottom of the menu for the side that comes with the entree. We've never had a problem substituting a side that's listed with another entree though.
