Food Allergy question

This will be our second trip to WDW with our severe-dairy allergic DD7. The first experience was great so I am feeling good about it. One question - does anyone know if I need to contact special diets via email before we arrive. Our trip is in 16 days. I made sure I put "food allergies" on all of my ADRs but my only concern right now is QS dining. Can we pretty much eat at any of the QS restaurants or are there only certain ones that will accommodate allergies?
This is just my last minute thought as I look through our days at the parks and where we may want to grab a quick bite for lunch or dinner on days we don't have a TS restaurant planned.

DD12 has dairy, egg, tree nut and peanut allergies. We prefer backlot express at Columbia House at MK, Sunshine Seasons at Epcot, Backlot Express at HS, and have only eaten at Yak and Yeti TS at Animal Kingdom. We have had luck at some other CS locations but with her allergies we stick with what has worked. Just dairy I imagine would be easier, but on our last few visits none of the bread options would work (the regular bread items all had dairy, and the allergen breads have egg). Ingredient lists change often, so always ask. We look at CS menus to see if anything looks like it would work for DD12. If it looks like it might, we let the counterperson know about her allergies and they usually get a manager/chef (sometimes they just let us peruse the ingredients list folder). Overall we have had very good luck with counter service, except one unfortunate reaction at Cooks of Dublin.
