Do they generally adapt a current menu item to fit a food allergy or do they completely make you a new dish?

Like... do they sub gluten free pasta for a pasta dish offered on the menu, or create something that's not on the menu?

We're gluten free, nut/seed free, soy free, and meat free- and I'm just wondering if we should look through the menus ahead of time or if we should just wait to see what the chef says when we get there? We have already emailed Special Diets.

Thanks! :goodvibes

Welcome to the world of allergy-friendly dining at WDW!

A lot of it will depend on the restaurant, the dish, and the chef. Generally speaking, it is easiest on everyone if you have an idea of the menu ahead of time, and what modifications the chef needs to make for you. For example, my BFF is allergic to tomatoes, so at the Plaza she ordered a turkey sandwich, no tomatoes. Easy peasy. A bit more complicated, I am vegetarian, allergic to mushrooms and mangoes. Sci-Fi's veg dish is mango-glazed tofu -- obviously a no-go -- so I asked them to make me a variation on their shrimp pasta dish, subbing tofu for the shrimp. Still fairly easy.

On the other hand, halfway through our last trip, my BFF had a reaction to something (she has developing allergies, so it's a minefield at the moment) so we stripped her diet way, way down, and we had several times when we asked the chef to concoct something that was kinda-sorta-maybe based on something from the menu, but was essentially a brand-new dish, based on her limited known "safe" foods. I think that's more likely with a severe allergy, or multiple allergies, where there's nothing easily modifiable.

I hope that helps. If you check out the disAbilities forum, there is lots more info on allergy eating there. The chefs at WDW are second to none -- we are so very spoiled. (Just last night we tried to eat out, and after sending her meal back TWICE BFF ended up eating nothing.) They will take great care to make sure you and your family eat safely. But anything you can do to facilitate that happening will make all of your lives easier. :)

for this level of 'free' eating i suspect you will have to make advance preparations. You should contact the special diet people at WDW...
