I know from posts I have read that TS will accomidate food allergies. Will CS do so too? In other words, if we go and she wants a wheat free waffle (which I know people have said they can get at Disney), will they be able to do that at the resort CS?

AND....Is the food prepackaged or are there people there to serve? If I want a grilled chicken sandwich without the bun, can I get that or is it already on the bun and wrapped and ready to go??

You should not have any problems. Most of the registers have bottons on them that say no buttom or allergy alert

We have stayed at a few of the disney resorts including POR - which was our last visit. My son has a peanut/tree nut allergy and is a type 1 diabetic (and is young still - 5 yrs old now) - so kid food is what we look for. Of course the kid's meals were not ideal - and had some unsafe items. There are definitely chefs there in the kitchen. Ask to speak to one of them (and try to go during a less busy time - cause it could take awhile otherwise). I talked to the chef about his allergies and diabetes and they let me modify the kid's meal to something more appropriate and safe for him (well...I think we ended up that day with a hot dog, a bag of chips and a fruit cup - the Mickey head crackers and some other thing like a cookie were unsafe).

For his issues we generally can pick and choose something that works for him and they make him up a little meal and we are charged the kid's price (this is CS at a resort hotel - not in the parks). You might want to try calling the resort directly and see if you can speak to a chef about a week before you arrive - only because I don't know if they routinely stock the gluten free items or they have to get them. I think it also depends on what meals and how many meals you plan to eat there. We only ate a few.

You can get in touch with someone at WDW and they can assist you in your choices. I know there were quite a few choices for CS but I did not see any at the resorts. I am sure they would be able to notify the resort where you are staying though.
There were also plenty of TS choices too!
