Foamy Yachtsmen Steak

I see they now put foam on the foods at the Yachtsmen Steakhouse. Has anyone asked to have their meal served sans foam? LOL

I know, I know, it's full of flavor and all that jazz but I can't get past the look of cat yak.
 
If you don't want it, then just ask them to serve your meal without it.
 
What in the world? :scared1: I've never heard of this, but it doesn't sound very appetizing. :scared: My DH and I are going there for the first time in December, and now I'm worried.
 
Well, what is it? You make it sound like it is not food for goodness sake...is it butter?
 

This must be a very new introduction to the Yachtsman menu. The current allears menu still lists various wine butters or peppercorn sauces with the steaks.

While I have not had an accompaniement like this at a Disney resort, I have had (I believe) something quite similar at other restaurants. As the OP said it is a flavoured 'foam'. The chef will take a sauce or other (liquid) seasoning, and place it in a special container which is vigourously shaken. When squirted out of the nozzle, CO2 is pumped with the liquid, turning it into a foam. Simply a novel way of presenting an accompanying sauce. Not exactly what I would call cat yak.

However, as I said in my previous post, if you don't care to try it, then just ask your server to omit it from the dish.
 
Lots of other restaurants include foam on certain dishes. I've seen foam on the menu at Yachtsman, Artist Point, Flying Fish, California Grill, and Bluezoo (not a Disney-owned restaurant, but still on-property).

And it's not on every steak. I think only one steak on the menu (deconstructed beef wellington) includes foam.

You can always ask for your dish without foam, but I think it's silly to ask for something removed just because it looks different. It's like sauce that's very light and airy, and it usually tastes great.

The foam is on top of the steak. Honestly, for me the disgusting component is the stuff underneath the steak - chicken liver that looks like diarrhea.

And yet another foam - buffalo mozzarella-flavored foam with heirloom tomatoes at Artist Point. I thought it was an interesting play on a caprese salad.

I ate there Saturday and had the NY Strip - there's no foam on that, just the regular brandy peppercorn sauce. My server also said that I could sub out any sauce, so I'm sure you can ask for no foam. Also, if you let the foam sit for a while, it falls apart anyways and just turns into a thin sauce, so there's always that.

And FWIW, the foam on top of their Stone Fruit and Cream dessert was absolutely to die for. I think I've told everyone I've talked to in the past 3 days about that dessert.

I get it. You like foam. Awesome. :)

Personally I think this trend means that restaurants are saying "Sorry folks but we're all out of ideas and this is the best we could come up with."

I don't want foam on my food. I avoid foam on my coffee too. Just not a fan of foam I guess. LOL

Oh yeah I guess I could just let it deteriorate! LOL That actually should work.

And isn't that brandy peppercorn sauce good though? There was that one and another whiskey sauce they make and both are delicious!

Agreed - I believe it was referred to as a peach-champagne espuma. Absolutely delicious, light, airy, and a ton of flavor.

But you see that one doesn't look like cat yak and really does look good. I'd eat that one. LOL Thanks for sharing the picture!!
 
we requested they remove the foam. it did not look appealling. the chef brought back a new plate and apologized. it was quite sincere.
 
The dessert looks delish but the foam on the steak looks like some of the dishwashing got on the wrong dish,doen't look appetizing at all

No problem. The thing is, signature restaurants change their menus quite often, and even tomorrow there could be a different foam on the menu. You might not know if the foam on a dish will look good (the peach one) or bad (like spit). And as someone else said, if you give it a minute to dissolve, it's just liquid.

I've tried quite a few foams at WDW, and I think all of those dishes would've tasted worse without the foam. Maybe you could ask for the foam on the side and let it dissolve?
 
I like foam as a presentation. It's fun.

I completely agree that the chicken liver smear looks like diarrhea and is completely unappetizing. Yikes! It looks like a tasty dish but the poo needs to be concealed.

Good idea. Thing is I *get* the idea behind foam giving supposedly incredible flavor but being so visual is a problem for me...there are just things that the looks of are so repulsive I can't bring myself to eat, no matter how good it's supposed to taste. LOL

But yeah, good thought to ask for it on the side and let it melt! Thanks again!

No problem. And again, it might not even be an issue, as most dishes do not have any foam with them. Perhaps 1-2 at each restaurant, but it's not like most entrees come with foam.
