I really should follow up this meal and posting by mentioning that, as a result of this dinner, I actually bought champagne. The Verve Clicquot Yellow label was on sale $10 off) just before New Year's, so that is what we had to celebrate. Then, as we stopped off to pick up some beer and wine for the ship en route Pt Canaveral, I bought another bottle ($53) for sailaway from our verandah.

The reality is that, I would not experiment at $50/bottle, but I will spend $50/bottle if I know in advance it will be worth it - and these events provide that opportunity.
 
I do enjoy your reviews (though I'm a lurker who seldom pipes up!) but i had somehow not come accross this report before. We seem to have accidentally (really) booked this for our visit to the Flying Fish on our coming trip which I'm now very excited about. It all looks utterly delicious.

I almost certainly have that receipt somewhere, but not handy - I think it was $125/pp. TIW discount does NOT apply to special dinners like this one (or the monthly Wave, or the Tasting Menu Mon-Thu at Flying Fish.)
 
Do you get to pick what you want from choices on the chef's menu or you get what they have?

This is strictly "you get what they have." My understanding is that they buy just enough of whatever they are inspired to make based on the number of people who have signed up and what looks good - and everyone gets the same thing. I have never been disappointed, but I like pretty much everything.
