Did the Flying Flying Fish Chef counter last night and it was a stunning evening. I plan to write a detailed review later but just wanted to let people know if you are looking for a special evening this is something to consider. We had already done California Grill, Jiko and Narcosses earlier in the trip and my friend who is here on her first visit said this was blew those away. We had great interaction and insight into the menu, amazing food (lobster Mac and Cheese and the lamb shank were heaven) and the wines it was paired with were perfect.

The lobster mac and cheese should be in the dessert category ... it is that yummy! Glad you had a great experience.

My friend & I did the Chef's Counter her 2 years ago & LOVED it. Can't wait to go again!

I'm already scheduled to do that next Wednesday.

We did it in May. And, are thinking about doing it again in December. I'll be looking for your review!

The Chef's Counter menu is very similar to what Chef Tim (Keating) creates for the double super-secret wine dinners. The Lobster macaroni and cheese was served at the last one on the 23rd:

Chef Tim had just the day before come back from a five day trip to New York with Scott Hunnel of Victoria and Albert's, and the macaroni in this dish was something he "scouted out" while there. He wanted to create a blockbuster dish for it. He also told us that, after everyone had been served, he himself ate three of the leftover portions while back in the kitchen...

(I would've carried their luggage all week for the chance to be on a food-ist trip to New York with Chefs Tim and Scott. The mind boggles...)

On the left is another stand-up-and-shout dish, lobster bisque en croute. I need to write a review of this dinner to do it justice.

Aaaand I'm going to another one on the 14th. Heh indeedy.

EDIT: Would anyone mind if I passed a link for this thread along to Keith Gimbel, the manager of Flying Fish? He really worked hard to get approval for the Chef's Counter, and he would be greatly pleased to see the love it's getting here...

Also, too: pictures of food from the April Arrowood Vineyard wine dinner, which was one for the ages.

Not strictly the Chef's Counter, no, but a good idea of the menu and courses you'll get with it.
