I recently had, in December 2014, two wonderful dining experiences at Flying Fish Cafe, one of my favourite signature restaurants at WDW. I have been served by the same person for both meals.
The second time, she told me that the Flying Fish Cafe is going to be refurbished and will close for about 6 months. A new glass wall exhibiting FF wine collection is planned, which will be very useful according to my server as the restaurant current wine store is far from the dining room. Some retheming is also planned. I was worried about the possibility that I may not have opportunity to eat there during my next stay, in May 2015, but she told me that the restaurant would still be open. The refurb is planned later in 2015-16.
I don't have more details. Once confirmed, this rumour would be a big news as, as far as I remember, only the California Grill had a so long refurbishment...
