Flexibility with WOC dining package

Was thinking about Wine Country Trattoria and the WOC dining package for my trip in August. There is one vegetarian option but it isn't really that appealing to me. Chances they would let me order off the regular menu instead? I called Disney Dining and they said they would send the chef out if I told them at check in. Anyone had any experience with this at Wine Country or Carthay Circle? If so what did they offer to make? Sorry for the ramble and thanks in advance!
 
I know that for Carthay Circle, the options are limited to those items listed on the WOC dining package menu. You might be able to make modifications (such as hold the sauce or things like that), but you cannot order off the regular menu.

Officially this is true, and I hesitate to say what I'm about to for fear that it will set someone else up for disappointment. But since they changed to the prix fixe WoC menu, my party has *never* ordered exclusively off of that menu and we've still always gotten our FPs.

It probably doesn't hurt that we've spent well over the prix fixe amount (between shared appetizers, nice bottle of wine, desserts, after-dinner drinks, etc.), but they've usually just brought the passes with our check. One time I had to ask, but there wasn't the slightest bit of resistance to bringing passes then. And some adults in our party ordered off the kids' menu, one time we even had an adult who didn't have anything at all because they were too full from other eating around the park, and it simply wasn't an issue.

Interesting to know...when I asked about substituting items the server said they could not. I did not ask about making our own "package," but you are the first person I recall reading about who has been able to do this. When did you last try this and how often have you done it?
