This is a double-side question.

Having recently secured an ADR for CRT for 11 people, I double checked my CC statement and after subtracting the base costs for CRT, I was left with a staggering amount (almost 19% ) that had been charged.

This begs the questions of:

What is the Florida Sales Tax and would a gratuity have been charged and if so, how much?
 
Restaurants tax at 6.5%, IIRC. I don't know if a gratuity is automatically added to the charge, but if it is, it would probably be 18% of the pre-tax total. So the numbers don't add up. Hypothetical math:

$100 base charge for the meal.
$6.50 tax on $100.
$18 gratuity on $100.
Total: $124.50

Working backwards...

$124.50 charge to CC
$100.00 base cost of meal
leaves 24.50 in other charges, which is 24.5% of the total, not 19%.

They do automatically add the 18% gratuity - that's probably what you're seeing. I believe it's supposed to be automatic on parties over a certain size, but we had it added every time we ordered anything OOP - even on *one* glow cube drink - and there were only 3 of us!
