fitting 1 day in at universal - drive or switch hotels

We are adding in two days at Universal at the end of our DL trip this summer. We decided to just stay at one of the hotels near there. We even got the VIP passes which I am so excited about and are much less than at Disney. Traffic is just too crazy and unpredictable.

We decided to do the exact same thing but in December. I'm a massive fan and whilst everyone in my family is clearly only wanting to do 1 day, I'm hoping to sneak in a second day before we leave whilst they go shopping.
