Fishing in Canal's

I noticed the daily thread on fishing in Bay Lake but I have some questions about fishing in the canal's.
1st - Can you fish in any of them or are some of them off limits.
2nd - What type of fish can somebody expect to catch in the canal's (bream, Bass, Catfish etc.)?
3rd - What type of bait would be recommended? I know type of fish determines a lot of this but is live bait or artificial lures better.
4th - Are there set hours that you can fish in the Canal's?

I enjoy fishing but I plan to go sometime with a Son-in-Law that loves fishing. We will have lots of family but I am sure he would at least want to fish in the canal's a couple of times.

1st- yes, you can fish all the canals.
2nd- bream, bass, catfish and crappie.
3rd- for bream and catfish (hotdogs and chicken skins) I know it sounds weird but its true. Bass like shiners best but will chase a lure. Crappie like a white jig.
5th- No set hours, DH has been out at 4AM fishing before.

The rules are no fishing by docks, catch and release only.

Thanks. You answered all my questions. Hotdogs and chicken skins does not surprise me. I commonly use chicken livers for catfish. I think I will try the hotdogs some time. Catfish should love them.

My son caught a nice size bass in the lake in front of the bike barn with a hot dog last month.
