On the Fantasy, can you see the fireworks from the concierge hot tub or from the rainforest room hot tubs? Looking for a good place to watch them while skipping the party.

No you cannot. The concierge hot tub is in the middle of the forward adult section and surrounded by high walls and a roof type structure.
You might be able to see them from the Rainforest Spa area if you stand along the railing, but not in the hot tubs. Those 2 (i think) tubs only hold like 2 people anyway and are set back from the railing so not a great view. They are not on the bump out area either.
If skipping the party you can try the Meridian lounge at the rear of the ship. Or any starboard side viewing area. Particularly the adult only area forward. You may also get a taste of them from deck 4 or most starboard side rooms (assuming your room does not receive a "please don't use your verandah letter".

The fireworks aren't guaranteed to launch starboard anymore. On our last cruise, they were port side which ruined our plans to watch from our verandah.

We have been concierge on all the ships. In the past the concierge team will rope off a section of the deck on whichever side the fireworks are being shot off from for the concierge guests. It is noticeably less crowded than the main deck portions. We have found that to be a good option. You can grab a drink in the lounge and make use of this space.
I have heard some people like to view them from the upper decks of the adult areas. This would be outside of the concierge lounge area you mentioned - near the location of Satellite Falls areas on Dream class ships.
Anyway to know before they shoot them off which side it will be on? So we could plan to watch from our Veranda? If we can't watch from there we'll check out the lounge. We're not really pirate people and either way I will HAVE to have somewhere I can sit for the duration.

We also have never seen or been offered a roped off area for fireworks viewing on any ship. The top deck on Wonder allows for fireworks viewing, and we were offered warm blankets and hot cacao there, but we never had anything offered on the other three ships.

They do not announce on what side the show will be shot from, even if you ask the Concierge team. You will however definitely not see it from any Concierge area on Fantasy.
Another good thing to check out - I hadn't even considered the adult area bars. Thank you - I've got to find some place where I can sit because of my stupid arthritis. Staying on my feet for more than 10 minutes is just not in the cards for me anymore.

Very strange. On our last four concierge sailings (2018-2020) we have had private fireworks viewing areas! On the Magic it was just forward of funnel vision on the starboard side - On dream class ships it was right outside of the private sundeck area.
Maybe it is up to the concierge team to decide if there is demand for it on each sailing? They have also always informed us of the best side to view the fireworks from if we did not want to use their designated space for concierge guests. I guess it just comes down to who your hosts are to get the right information? Never hurts to ask to see what information they will give you since you are paying a premium. Each sailing is different and has different demands and circumstances, so I guess you never know. It has just been a given for us on our last four cruises, so I assumed it was the same for everyone!
That's where we usually watch, the little chairs along the railing, right in front of Currents. Its not a perfect view but it makes for a relaxing, uncrowded experience. Just get there early enough to grab seats.
