Firsttimer~so many questions

Definitely need help....my head is spinning with questions.
I have planned out our days and made all my adr's for our week May 21-28th. But now I am trying to figure out our days....and it doesn't seem possible to do it all.
I was planning on each day having a trip back to our room (POP) for an afternoon break/swim but it doesn't look feasible with all there is to see and do. For example on Monday I planned Epcot. I was thinking we would get there at opening and do ?? don't know any order yet but do some stuff. and then grab a cs lunch and head back to POP. I have made reservations for dinner at H&V for 630 on the Fantasmic thingy. How can I possibly get around all of Epcot with 2 kids (8 &11) and still have the break back to POP in the afternoon.??? Is this possible? I have no idea about how long it will take to get back and forth from the resort to the parks. Should I figure leaving the park around 2 and coming back just in time for dinner at 630? If I do this there is no way we will see much of Epcot.
I had a similar plan for MK on Tuesday. I have dinner reservations for CRT at 630 and thought we'd stay for wishes also. Even though we have the kids I was thinking there are probably alot of attractions we will "miss" due to the fact my son has some health concerns and can't go into caves (damp areas) and water attractions MUST be chlorinated (I need to find out if they are as there seem to be alot of them that "spray" water on you)
OHhhh I am tired and our trip is still 46 days away....so many issues.

I think you will lose a lot of time in the parks going back to the hotel for breaks. Your kids are old enough to go through the day (unless your son's health problems require a break). Maybe just plan a couple of evenings to get back to the hotel early enough to swim?
 
Like the above poster stated I believe your kids will hold out for a full day in the parks unless there is some reason that your son needs to rest back at the hotel.

We traveled a couple years ago with my 4 year old niece and she was so hyper she did fine with a whole day in MK. I really think a trip back to the hotel will waste time you could be spending in the parks.

If for medical reasons you need to go back to the hotel then of course you should do that, and you can just plan around those resting times. Otherwise I'd look into spending the whole day at the parks and relaxing by the pool or in the room at night.
