If you want two rooms, Bojangles gave you excellent advice -- any of the
DVC Resorts would do (as long as you stay away from the studio rooms).
You can also go the Suite route at any of the Deluxe Resorts or at the CSR (a Moderate). If you have Suite questions, you can post them here or PM me (my family has stayed in a few of the suites at the GF, AKL, and YC). The WDW suites really are lovely.
Another option for you is to consider booking two standard rooms -- make a request that they be connecting rooms when you book the reservation.
As to swimming pools, have no fear -- every WDW resort has one (or two or three or...). If you pick a WDW resort, you're going to get a pool. I should note that a lot of the resorts have kiddie pools, too -- I know the BWV, YC/BC, AKL, GF, and a few others do. Here is a photo of the kiddie pool at the AKL --
