First Trip in March - What Days?????+

OK, I have a bunch of things checked off my to do list.
1. Airfare
2. Booked Room POFQ
3. Got rental car
4. Got AP (w/ hopper w/o extras) for me & MYW tickets (7 day w/ hop w/o extras) for mom and DD

Now what??? With all the information on Extra Magic Hour's (early & late). I am a little confused as what day to do what park. Here is a little background: me, DD (6), DM (mother) (50). DD is a real go getter, I know she will not be able to go all day every day, but she doesn't tire easily and never requires a nap at home. I realize this doesn't mean she won't need one at DW. Me & DM = go go go go. We will arrive 6pm Friday March 4th and leave Friday March 11th. We would like 1 day at AK & MGM and 1 & 1/2 days each at MK & Epcot with a day in there somewhere for rest for a trip to the ocean. Arrival day and leave day we would like to leave open for things we have missed. So, I have Saturday (March 5th), Sunday, Monday, Tuesday, Wednesday and Thursday. My question is, leaving one day open, what days do you recommend for each park. We will be able to Hop.

We'll be there pretty much the same time, 3/5-3/12. Here is our itinerary (keep in mind our group consists of 3 couples, mid twenties-mid thirties)

Sat 3/5- Arrive, check in... Dinner PS at CHef Mickey's 6:10
Sun 3/6- breakfast in hotel room, sraight to MK! MGM later and stay for EMH
Mon 3/7- Universal and/or IOA, CityWalk in the eve
Tues 3/8- AK, maybe stay for EMH if needed... PI at night
Wed 3/9- breakfast in hotel room, AM EPCOT, late afternoon to MK
Thurs 3/10- Breakfast PS at Kona Cafe 9am...AM MGM, later afternoon to EPCOT, stay for EMH... head to the Boardwalk for Jellyrolls/ESPN Zone
Fri 3/11- breakfast PS at Crystal Palace 9:10am...stay in MK, maybe hop to another park, PI at night
Sat 3/12- breakfast at All Star Food Court, check out... DTD shopping, car to airport at 3:30pm

I'm sure we will squeeze more DTD shopping time, that's one of my favorite things to do!

For us it will be Easter so we won't be hopping. I believe in one park a day!

day 7 hotel/shopping
