First trip back since 2004 have some questions

We haven't been to WDW since 2004 so obviously there are a lot of changes not only there but with us. One of the biggest changes is that I now have a disability that makes it hard to walk. I have already learned from reading here to rent an ECV offsite so i have it all the time. It is me, my husband and our 2 sons age 12 and 17 going. We are going June 5-15 and staying at AKL. I do have some questions though.

1) At Blizzard Beach and Typhoon Lagoon the castaway creek and cross country creek can you still walk through them or do you have to get in an inner tube? Last time my husband was able to just walk with us and it might be easier for me to do that then try to get in the inner tube because my leg works much better in water. Also I need my cane to get in the water will I be allowed to take it with me or what will I do with it(if water is waist high I don't need it) because I don't want it to disappear.

2)Our 17 year old has some mental health issues but is doing good. The only problem is he requires more sleep then the rest of us. Is it safe to let him go back to the room by himself if he has had enough? It isn't pretty when he gets over tired and has a melt down.

3)I set up MDE and have questions about it. When I originally set up account with disney website I used my name as Debbie. When the travel agent booked our trip because she was doing our airline tickets too had to do it as on our id so my name is Debra on reservation. So it has both listed on MDE and I can't find anyway to get them to see it is same. It did let me make ADRs and put Debra as in charge. Will this be a problem and if it is who do I talk to to correct it?

4) Also it says at the dining plan qs 2015. ts 2015 child, ts 2015 adult. We have no child for the dining plan. we paid for 4 adults. Who do I contact about this?

5) We booked the pirates and pals fireworks cruise. Is there any way to link that to our MDE?

6) I have been reading everything I can find about the rides and accessibility with mobility issues. I have checked out the pictures of the ride vehicles. I know pretty much of what I can and can't go on except for a handful of things. The ones I am not sure of is it ok to wait in line and try and if I can't then just exit or do they get upset by this because you are wasting time?

7) We have been to WDW about 4 times but it has always been over fourth of July week. Are crowds as bad in the beginning of June?

I have already learned so much from reading here and appreciate any answers you can give me.
 
With regards to number 4, I'm betting it's listed that way because for the hotel reservation, a 12-year old and a 17-year old are considered children.
