That day is not set in stone.

Looks great, but I would allow more time for Epcot. Your party is mostly adults, and Epcot is a great park for adults. On Saturday, by the time you get to Epcot after a half day at AK, the lines at Epcot will be long enough that you will get to do very little. Many first timers don't realize how much there is to do there. IMO, it is much easier to spend a full day and night at Epcot than MGM. Aside from the obvious rides (Mission Space, Test Track, Universe of Energy, Soaring, Spaceship Earth, Imagination, Etc), the world showcase is a great place for adults. There is street entertainment all around, and you can stroll with a glass of wine and just drink it all in!
