I would like to plan on going to Disneyland in December 2013 before Christmas for a week with my daughter (20). I have never been there. How far in advance should one book? Should we stay at the Disney hotel or a good neighbour one? Also, is there any vegan food at Disney for my daughter?

Stay at a Disney hotel, especially if it's your first visit you will enjoy being immersed in the whole Disney experience. :goodvibes

There are plenty of vegan options for your daughter, she definitely won't starve. ;)

Book whenever you want, you can always change your reservations if a cheaper deal comes out later or whatever. (There are different rules about when to cancel, but they are spelled out clearly--package cancellation dates are farther out than Room Only reservations, FYI.) If you know when you want to go, start looking at the Disney website now and "mock" book some reservations to get an idea of prices, etc. Lots of people make their reservations a year in advance.
