Looking to set up rest days during our September 3-14 Orlando trip.What days of the week are best to pick for IOA as far as low crowds.

Least busy would be Tuesday, Wednesday, Thursday. First few weeks of September (after Labor Day) are not very busy.

Sundays aren't bad. They tend to be the day that people arrive for their vacations or leave from their vacations. I think you probably won't run into much traffic during those two weeks.
