first time to use meal plan

My husband and I are going to WDW Dec 6th -11th and this is his first time to step foot at WDW! I have been trying for YEARS and since it is our 10 year anniversary in Oct and my bd in Dec he has agreeded. What is the BEST places to book our ressie at? Should we do the dinner show at the poly or go to the Cal. grill? We are not taking the boys and will when they get older....want DH to experience what he has missed all these years.

First of all - Welcome to the DIS
How many nights will you be there? Do you usually like a sit down meal each day? Restaurant reviews are so very subjective. What one person loves another hates. For example, we will not return to Yachtsman Steakhouse at the YC, which is a favorite here on the DIS.
I think the first thing for you to do is to review restaurant menus. They are here and also on allearsnet.com. The best thing for you to do is see what menus appeal to you and DH. Look at Resort restaurants as well as the Park restaurants. There are over 100 restaurants on the DDP, so you have many choices.
Rememeber it is critical to make your ADR's 90 days from check in to maximize the availablity while on the DDP
