The unofficial
DCL blog site has tons of info including menus.
https://disneycruiselineblog.com/menus/
Disney has rotational dining, so on a 3 nt cruise you'll visit each restaurant once and get the menu for that restaurant (and you have the same wait staff.) You can order as much (or as little) as you want from each category on the menu. If your DH prefers basic food there is a 'lighter fare' offering every night that has a basic steak or chicken or salmon with rice or potatoes and veggies. If you ever go on a longer cruise the menus never repeat, so you have a new menu every night.
First time cruise:
App--everything is on the app now...so get the DCL navigator app before you set sail. It won't be fully functional until you board.
Seasickness --if you think you might be prone to motion sickness, Bonine is a good non drowsy OTC med, the drug is meclizine. DD22 takes it and it works well for her with no side effects. If you don't bring anything with you and feel seasick, pre Covid there were free samples of meclizine in a bin outside of health services on deck 1.
Gratuities --these are automatically added to your account and you'll receive slips /envelope to give to the people on the last night. The amounts just went up to $14.50/guest/day and covers the room steward ($4.75), server($4.75), assistant server($3.75), and head server($1.25). These tips actually cover all your regular food service --trips to the buffet, quick service, main dining room, etc. Only thing not included is room service (which is mostly free, some items have a charge and will note that on the menu), so be sure to tip room service if you use that service.
Placeholder booking onboard--for a $250 deposit you can get 10% off a future cruise within 24 mths. If you don't use it you get your deposit back.
