First time doing Disney parks on my own and first time on a cruise

Hi,
Me and my daughter (9) are flying out from England at the end of January, we have a week in the Caribbean hotel and then a week on the fantasy cruise around the western Caribbean.
I have researched nearly everything I can possibly think of, but I am still unsure what to pack in the way of clothes. Everything I have seen says layers but I am scared I will take far too much stuff and we will weigh way over, any advise on what to wear at the end of January, start of Feb for Florida and for western Caribbean ?
Any other tips doint all the Disney parks I have only ever done magic kingdom and also any tips for first one cruisers

I am from Indiana and our winters are very cold compared to Florida winters. When we went in January we wore shorts and a tshirt. We had a light jacket only for the morning and after sunset. For me, once the sun is out in Florida, its warm no matter what. I can't speak about the cruise but I'd image its about the same if not a little warmer.
