I'm with most everyone else--Haunted Mansion or BTMRR. Those are just such "Disney" rides, you know? But the absolute first thing I'd do is pause on Main Street then take a photo in front of the castle.

Also, you should consider the monorail, too. It's almost synonymous with "Disney World," and it never fails to hype me up for the day.

Definitely Haunted Mansion! It's a fun classic ride!

I'm going to go in a different direction from some of the other posts and say the Walt Disney World Railroad for several reasons. It's right there at the MK entrance so it's extremely convenient. It's a nice, relaxing way to ease into the trip for someone who might be apprehensive. And finally, it gives a fantastic overview of the whole park while simultaneously being a great teaser for all the fun things to come.
