First Night Dinner with 77 Year Old Mom?

We are going in June, and though we are AP holders, my mom isn't so we need to eat outside the parks the first night. We need to eat somewhere fun and that she will enjoy! She is a kid at heart but doesn't have a huge appetite. What would WOW her and give her that special Disney Magic the first night? I was thinking Chef Mickeys but that is so busy and over the top it might be too much. Any ideas?
 
I would go to Boma, you can look around the AK lodge and see the animal, then have a great dinner. OHanna, at the polynesian would also be fun, you could eat there and then see the fireworks from the Magic Kingdom.
I also enjoy eating on the boardwalk and then walking around, Spoodles and Flying Fish are both great...

How about the Rainforest Cafe at Downtown Disney?
 

My 76 yo grandma's favorite meal from our Dec trip was Chef Mickeys. She preferred it because the buffet allowed HER to control how much food she got so she didn't feel like she was wasting it. She liked the characters too- I have some great pictures from that trip. Lesson learned for me, 3 of the 4 PS I made for the upcoming trip are buffets- CP, Chef Mickey's, and Boma. However, the one that isn't is at DTD-Wolfgang Puck Cafe. DTD is another great alternative with lots of places to eat, a Disneyish feel, and is outside the parks. Something often suggested on these boards is sharing a meal to not get overwhelmed with the amount of food also. Good luck with your decision and enjoy your trip.
