First Disney Cruise- Remy & Rainforest Room Question

Hello! My DH and I are doing our first Disney cruise on the Fantasy on March 18th. Two random questions:
1) At Remy for dinner- do they cook all meat to the same temperature (med rare to medium) or can you specify a temperature preference?
2) How quickly do the rainforest room passes sell out? I would like to get a day pass for one of our days at sea- but wasn't sure how quickly those go.

We didn’t have luck getting day passes for Rainforest room (both fantasy and wonder) as they didn’t offer them, only length of cruise passes, but I don’t know if that’s changed.

I haven't been to Remy, but IIRC in Palo you could specify what temperature you want your meat cooked to. For the level of restaurant Remy is I would be surprised if you couldn't.

They weren't doing day passes to the Rainforest Room on the Fantasy in September; you had to get the length of cruise pass.
 
They were doing day passes for the rainforest room on our dream sailing this January, but were not on the fantasy in June 2022.

They will ask how you like your steak cooked in Remy. I like mine medium well and my husband said to prepare it however the chef recommends. His was way way too red for me.
 

Just remember for the Rainforest room - sea days are very crowded in the Rainforest room. Hundreds of passes are sold (either day or length of stay) and there are only 10 heated loungers. I didn't find it relaxing with people hovering around wanting your lounger. My experience is pre-COVID.

My experience (also pre-COVID) was very different. We did Rainforest Room on a sea day on a 7-night, and it was not at all crowded when we went. There were a couple of other people there, but we never had an issue getting a heated lounger when we wanted one.

It makes sense that it would be busy on a sea day, so maybe we just lucked out?
 
Fantasy 7 day in September the Rainforest was a little busy but we found luck at off times. Going after breakfast or around lunchtime we could usually get loungers without waiting too long. The 1-4 time seemed busy.
On a Wonder 3 day cruise in December there was no wait and twice had loungers to ourselves.
 
The Rainforest Room's crowdedness or lack thereof is hit or miss, in my experience, which is why I recommend splurging on the cruise-length pass, so you can leave and come back another day if it's less than ideal the time you visit. On my Dream cruise last month, I bought my cruise-length RR pass on the second day of the cruise.

Remy will cook your meat to your specifications.
 
Was on the Fantasy in December and they only sold length of cruise passes which mostly sold out on embarkation day. I was told they only sell to a capacity of 60. For those that they hadn't sold they would prorate on the 3rd day for the remaining part of the cruise. It was $179 + 18%. Even on sea days didn't have to wait for a lounger

how long was you cruise
 
Length of cruise rainforest pass on the 7 night western on the fantasy in January - $152 per person. Including tip. Our cruise was sold out and the rainforest room was full every time we went. The loungers were always full - as were the hot tubs. You had to wait for someone to leave to use one. And we figured out that the loungers are not cleaned between guests. That was a no go for us.

You can specify it, but I generally let the chef make the decision. If I'm ordering a steak or prime rib in an average restaurant, I'm going to specify that, but in a higher-end restaurant with a dish that's been designed to highlight certain flavours, textures, and combinations, I prefer to let the expert weigh in on what they intended.
