So if the preview for the new Star Tours ride is on Friday May 20th does that mean the ride will be open to the general public on Saturday May 21st?

No. They have announced that it opens at Disneyland June 3.

That's not the only preview...I just won a preview for AP holders only for May 31st. As pp said, it's scheduled to open on June 3rd.
