Frontierland and Adventureland are not open during EE. Only Tomorrowland and Fantasyland are open then. Here's a list of open rides / attractions on EE at MK:

Astro Orbiter
Buzz Lightyear's Space Ranger Spin
Cinderella's Golden Carrousel
Dumbo the Flying Elephant
Mad Tea Party
Main Street vehicles
The Many Adventures of Winnie the Pooh
Peter Pan's Flight
Snow White's Scary Adventures
Space Mountain
Tomorrowland Indy Speedway
Tomorrowland Transit Authority

That will obviously change your path a bit!

Also, thought I would mention two things. During EE the park does not open until 8:00 a.m. Also, being that this is an EE day the park will be very busy in the afternoon. We usually hop to another park in the afternoon. If you are unable to do this for some reason, make sure you get all your "must see" attractions done before 1:00 p.m. You might be surprised at the size of the crowd on a Sunday afternoon.

YOU ARE SOOOO RIGHT!! OH MY GOSH, I DON'T KNOW HOW I MISSED THAT?! I JUST LOOKED AT MY PLANNER (1 1/2 IN. BINDER) AND YOU ARE SOOO RIGHT! I HAVE TO COMPLETELY REPLAN MY DAY.

THANK YOU FOR PREVENTING THIS ROOKIE FROM MAKING A HORRIBLE MISTAKE! NOW, OFF TO MY LABORATORY!

I noticed that you are only allowing 30 minutes for lunch and dinner. That is a pretty optimistic estimate even at a slow time of the year in my experience. To be safe and not feel rushed, I would plan 1 hour.

May I suggest you buy the 2005 Unofficial Guide?

It has tons of Touring Plans that you can run.

Why don't you ask your kids which rides they are most interested in and try to get those in first, then slow down and enjoy yourself! You can't possibly do it all in one day! And, if you try, you'll probably just wear yourself out! It will be there when you come back! Also, some of the rides your kids may not be interested in anyway! Don't forget to stop and smell the roses!!! Have a great trip!
