DH and I have done several trip without the kids, and are taking a week this Dec. for a vacation just us.
We really enjoy the slower pace, don't be surprised how many things that you see that you never new where there before. It is a whole new experience without the kids.
All your dining options are great - enjoy!!
A few things that DH and I like to do while at WDW and it's just us.
Hand holding is a rule.
Someone already said about the glass of wine and Epcot great choice. There are several great places to sit and watch the world go by, one of our fav's is the fountain in France, also a must is to share a pastry from the bakery in France. Take your time to explore each country without the kids saying this is boring,

Relax at the pool, we always bring some really good wine( I pour it into a plastic container with one of those freezie things in it ) and roll meat, crackers and cheese and have a picnic pool side, we always pick the chairs that no one wants away from the crowd.
Ride the old school rides - this is one of our favorites, we end up laughing because we know the words or song. Or check out a ride that your kids don't want to ride because they think its 'lame'
Do a character meal without the kids, swing your napkin around get your pic's with the character, you will be surprise how you feel, the magic takes over and you are a kid again.
Do the monorail cocktail trail - stop at each resort have a drink and really look around at the grounds, and the lobbys - the Poly's our favorite.
