This recipe is from the Eastern States Exposition or as we call it the Big E fair.

8 Large Eggs
1 qt. Fresh milk
3 to 4 tbls. sugar
1 tsp. salt
1 cup flour (8oz.)
1/4 lb butter

Spray 12" x 16" x 2" pan well with cooking spray, then melt butter in pan. Mix thoroughly with beater - milk, eggs, sugar, flour and salt. Pour mixed batter over melted butter. Bake in 450 degree oven for 20-23 minutes, until pancake rises to top of pan & lightly browns. Remove from oven & let settle before cutting. Serve with maple syrup, jelly or honey.

Recipe may be cut in half for 9" x 13" pan, or thirds for 8" x 8" pan.

I hope you like it. It's just DH and me so we had to cut the recipe in half. I also cut the butter down even further than that. :)

I got to the first line and thought, geez..wonder if she's from MA..I was born and grew up in MA, lived there till 5 years ago..I really miss the Big E..looked forward to it every year..here in Western MD all they have is the County Fair (and boy does it lack the size and variety of the Big E!)

DH and I Love the Big E. We also frequent Sturbridge Village, Brimfield Antique Show and Basketville, the Cape. I :love: visiting MA.

I make this one...

Dutch Baby

"A rich popover pancake served with melted butter, powder sugar, lemon wedges or fresh fruit. A dish that's well known in Seattle, Washington."


INGREDIENTS
3/4 cup all-purpose flour
3/4 cup milk
1 pinch salt
3 eggs, beaten
2 tablespoons butter, melted
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9 inch pie or cake pan.
In a large bowl, mix together flour, milk, eggs butter and salt. Stir until smooth. Pour batter into prepared pan.
Bake in preheated oven for 10 minutes. Reduce heat to 325 degrees cooking for additional 5 minutes. Serve immediately.
