I know this is TOTALLY a weird topic for here, but the first time I heard about this delicacy WAS on a podcast, and we DID discuss it here previously (think t comes on one of the D-Luxe burgers, if I'm not mistaken).......

Even had the Palmetto brand you espoused, Mr. Llama! Had it both on some celery, and some Ritz crackers. While it's very good, and I will definitely have it again (have to finish the container!), it wasn't something I'd say I'd walk 10 miles for. But since it was such a scavenger hunt even FINDING it (apparently a lot of place only have it during the holidays, I had to get it from a more "upscale" market with a bigger "gourmet cheese section" to get it during the summer), I'm glad to say I finally FOUND it, and TRIED it! Item crossed off the "bucket list". :) Or - maybe "pail list"? :rotfl:

It all depends on who makes it, home made is much better than store bought. I'm from Georgia so it's pretty much a staple here and it's a sin to make it with anything other than cheddar cheese.

I love pimento cheese! It is so good on a white bread sandwich with tomato slices. I think it's really funny that you had to go to an upscale market with a gourmet cheese section. I think of pimento cheese as the exact opposite of upscale and gourmet! :)

Never tried it, either! Don't think it's something we have in the North. Years ago when I was a kid, there used to be a pizza-flavoured spread that you could buy in a small tin and put on toast, English muffins & bagels. But it disappeared decades ago. Cheez Whiz (Kraft brand name) is the only 'big cheese' spread here now. Think you call it plastic cheese in some parts of the States?

Not really a cheese spread so much as a food item all on it's own. It's just sharp cheddar cheese (shredded) mayo, pimentos, salt and pepper. Some people put cream cheese or sour cream in it but that's a regional thing. My family just does the basic. Just finished making me some egg salad for sandwiches at work next week, now I'm craving pimento cheese so I'm going to have to go to the store to get some pimentos and make me some.

Proud of you Heidi. You gave it an honest go. The poster who said that nothing matches homemade is correct....I just happen to think that Palmetto comes the closest.

I've yet to have it on a burger. But a restaurant in town serves this appetizer....deep-fried pimento cheese sticks. They're basically tortillas filled with pimento cheese and bacon, deep fried, and served with ranch dressing.

Great....all I did was describe it and now I need a cigarette.

Ok scrap the nudie bars, get me some of this and I'll be a satisfied woman!

Agreed. But we never use cheddar cheese. As a kid it was cream cheese and boiled, peeled red bell peppers. Nowadays, I roast my peppers on the grill and add scallions, too.
Most storebought brands are made with pre-fab mayonnaise, which I don't care for.

Heidi....will you accept this trip to the nudie bars in NYC?
Wow - can't say it's the FIRST time, but it's one of the ONLY times in my life I am SPEECHLESS. Can't even fathom up a clever retort!!

Our local grocery store makes a chipotle version and a hatch pepper version, when the hatch peppers are harvested. I love pimento cheese! I could eat it straight out the container with a spoon, but it is good on crackers. I didn't even think about it not being available up north. How unfortunate:)
