Ah. Well there goes MY answer to "what's the recourse".

But we booked over a year ago and this job opportunity just came up in the last couple of months, so we didn't know at the time of booking. Time for me to read the fine print on a lot of insurance policies!

You're likely going to have to pay a higher rate for insurance that covers employment changes with NO lookback period. If you got insurance that covered employment changes back when you made the first payment it would have worked, but that's not the case now.
 
My DH is also looking for a new job and we have a huge vacation coming up in August (Alaskan cruise booked opening day last year, now PIF). His plan is to wait until he's actually presented with an offer (he's pretty much in the interview stages right now) and at that point let them know that he has a non-refundable vacation booked and he's hopeful that they are understanding and can work around it. He anticipates that at any new job, this will be unpaid time off. I can't imagine that most prospective employers wouldn't be understanding of the situation.
