We were only able to get a lunch ressie for lecellier so we would have the fillet with the demi glace(what is demi glace)or we coule have dinner at concourse and have the plain filet? Help!which would be better?

The demi glace is just a sauce. I'm sure they'd happily give you the filet without it, all you need to do is ask.

Having dined at both and had the filet at both, Le Cellier is better! Le Cellier has better Creme Brulee also.

From Chef.Com:

Q. What is demi-glaze?

A. A demi-glaze, or demi-glace, to use the French, is a combination of 1 part beef stock with 1 part brown sauce (with a bit of Madeira or sherry thrown in), and cooked until it is reduced by half. The result is very rich with concentrated flavor, and is used as a base for many other sauces.

The brown sauce, or Espagnole sauce, is made of a rich meat stock, a browned vegetable mirepoix (diced carrots, onions, celery, and herbs), a brown roux, herbs, and sometimes tomato paste.

Making demi-glaze is more work than most home cooks are comfortable with, yet a surprising number of recipes call for it. It is available commercially by mail order and in some gourmet shops, although the price is high.

LeCellier is awesome. One of my absolute favorites at EPCOT. The filet is wonderful with the sauce, but as someone else suggested I am sure they would leave it off for you. Disney chefs in my opinion are very accomodating. Also they bring out breadsticks (sour dough, pretzel and wheat I believe) also wonderful.

The sauce is a barbque sauce (don't care what they call it, that's what it taste like). My grandson had this filet and asked for the sauce on the side, no problem. So you can certainly ask that the sauce not be on the filet and they will accommodate you. But I love Concourse's filet too.

The demi glase and the BBQ glase are two different steaks. Be aware that if your allergic to mushrooms, as my DH is, the demi is made with mushroom stock. The chef came and spoke to use last time about it so DH's steak was made without the sauce, still good though. Son hated the maple bbq glase and wished he had asked for none on his...
