February Dining. Questions and help please ;)

I'm looking for real world people's experience with dining in the first week of february, how important are ADR's? is it really necessary to do it so far in advance how did you do with walk ups vs. same day reservations, etc informaiont such as that.

i always made my must have's ahead of time. Ie- Le Cellier and any princess dining. However, even if you can't book ahead of time, we were able to call at the hotel in the morning or before bed to make any changes to our time and location. We could ususally get it but we were unable to change the time on Le Cellier,. I have no comments on walk ups as we never tried. I am planning again for next Feb/Mar and not sure if we will book everything in advance or not.
 
I still make ADRs at 90 days when going off season. It's just a little easier to make changes.

On our last Feb trip (back in 2006) we were able to get into Rose and Crown for dinner at 7pm without an ADR and lingered until 9pm for the fireworks. We were then escorted to the patio (which was not open for dinner) with the entire restaurant to view the fireworks. It was the best view we've ever had and completely unplanned.

We didn't have such luck with Ohanas. The earliest we could get in without an ADR was 9:15, we went since my mom really wanted to try it. I'll never dine at Ohanas late again. Too much heavy food too late in the evening for me.

I've found anytime of the year, should you want to change your ADRs call first thing 7am while onsite.
 
It just seems to ....structured, I like vacation to be fun, I might want to eat on friday at house of blues 90 days out, but i get there and find I want to do it on wednesday (as an example) I'm just not sure the ones we want to do are super duper popular or if we just should wing it. about the only "character" one we want to do is the playhouse disney one for my two youngest, and I know we wanna do the SCi fi cafe, and such, but most of the ones we want to do for table service we'll do for lunch to be affordable.
I think we'll just pick one or two places we KNOW we want to go to, and make those and then fly by the seat of our pants for the rest.
