For mom and daughter breakfast/lunch/dinner?
 
Are you vegetarians? If so, you might want to check out Tusker House or Boma-both are fantastic :)
 
Totally agree with aristocatz. Boma (supper) and Tusker House (breakfast) are fantastic. My family also likes breakfast at Crystal Palace. Next trip we are trying Liberty Tree Tavern (I think this is what it is called) for lunch in the Magic Kingdom as I have read fairly good reviews on it. Good luck with your planning!
 
My mom and I went to Sanaa on our last trip and we loved it. Its now a must do for the whole family. Lunch is cheaper than diner and you can't beat the view of dining with the animals.

We loved Boma breakfast and Ohana dinner. For Ohana, they noticed that I wasn't eating the meat (only the shrimp) and they automatically brought me out a vegetarian plate.

Sci Fi Dine In Theatre (even if you only go for the spinach and artichoke dip and a milkshake it's worth it!)
Boma breakfast (best on property in my opinion)

If you are looking to save more money, I always tend to do my sit down meals at lunch instead of dinner because the menus are always priced lower, and generally they will have some (not all) of the same menu items at lunch and dinner.
 
I wouldn't do Ohana if you're not big meat eaters. That meal emphasizes meat - lots of it - and it's very expensive.

I second Sanaa! The bread service with all of the different dips is really excellent and meat free. The mango lassi smoothie is super yummy as well. And the Animal Kingdom Lodge and the animals are such a nice experience.
 
Boma is a must-do for me. The carrot ginger soup is so good that i found a recipe and make it at home all the time. There are plenty of options for people that don't eat much meat. My bff is the same, mostly veggie, some chicken, and she is SO excited for Boma. I also love that there are plenty of options to try new things without having to be worried about ordering something that you might not like.
