I am not vegetarian - but a good friend is. We have several areas of our lives where we cross paths....church, school functions, etc.
She's expressed frustration about the typical "pot lucks" being a little short on the "luck" department for her.
I'd like to try a few recipes & take them to some of our joint events so she feels more included.
I'm thinking main dish type things, but I will take any suggestions.

How very considerate of you! I've been a vegetarian for about 10 years now and I really appreciate when people like you go out of their way to help us.
Here is one of my all-time favorites. My late grandfather created this recipe in our family. It's Spaghetti and Peas, Italian style:
Spaghetti and Peas
(makes about 8 servings)
2 Tablespoons olive oil
1 Tablespoon butter
1 large onion, chopped
2 large green peppers, chopped
4-8 cloves of minced garlic (the more the better)
2 teaspoons each of: oregano, basil, black pepper
1 teaspoons rosemary
3 bay leaves
½ cup fresh parsley, chopped
½ cup white wine
4 cans of sweet peas (12oz) (Del Monte Preferred) -- NOT drained
angel hair pasta
Place olive oil and butter in large saucepan with onion and green pepper. Cook for about 30 minutes, stirring occasionally until onions are caramelized.
Add garlic, spices, and parsley and cook for 5 minutes. Add wine and four cans of peas with pea juice (yes, pea juice). Simmer for about 20 minutes (the longer the better).
Serve over angel hair pasta. Garlic bread and salad makes a complete meal.

And here is an awesome chili recipe:
Vegetarian Chili
3 teaspoons olive oil
1 large onion, diced
2 red peppers, diced
2 large carrots, diced or shredded
5 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon red cayenne pepper
2 (15-ounce) cans chopped tomatoes (jalapeño or Mexican style)
1 cup vegetable broth (or water)
1 (28-ounce) can black beans
1 (15-ounce) can red chili beans
1-½ cups of fresh or frozen corn
coarse salt and freshly ground black pepper
In a large pot, heat olive oil over medium-high heat. Add onions, peppers, carrots, and garlic, cook stirring often, until vegetables are tender, about 5 - 10 minutes. Add chili powder, cumin, and cayenne pepper and cook 1 to 2 minutes more.
Add tomatoes, broth, black beans, chili beans, and corn to vegetables. Bring to a boil, reduce to a simmer. Cook 20 to 30 minutes. Taste and adjust seasonings with salt and pepper.
Serve over rice.
