Favorite Tokyo hotels?

Can anyone recommend some favorite hotels in Tokyo? I am doing in April with my mom (in her 60s and very active). We will be doing one day at TDS but otherwise just exploring (shibuya area, shopping, the old fish market, etc.)

I would love somewhere with a decent onsen that is central to transit with some English speaking staff (or at least where we will be able to manage not speaking much Japanese.

I have points so was considering the Grand Hyatt, but we wanted to look at other options too. If paying cash, I’d prefer to keep it under $300ish
