I'm going to have a birthday party for my twin sons in a couple of weeks and we would lke to do a Tex Mex theme - Appetizers, entrees etc. Any favorites?? Of course there wil be many magaritas and coronas with lime. Thanks for you help.
 
I guess it depends on your definition of "Tex-Mex". I have a folder full of "Mexican-type" recipes. Will your guests be seated or standing? I hope this is the kind of thing you're looking for. :o

For appetizers, how about one of those 7 Layer Dips? If you're going to be seated, I have a really nice Tortilla Soup recipe. Or we like this one for something a little different.

Apple Salsa and Cinnamon Chips

Cinnamon Chips
4 flour tortillas – 7” size
1 Tbl granulated sugar
½ tsp ground cinnamon

Salsa
2 granny smith apples, medium
1 cup strawberries, sliced
1 kiwi, peeled and chopped
1 orange, small
2 Tbl packed brown sugar
2 Tbl apple jelly

Preheat oven to 400 degrees F. Lightly spray tortillas with water. Combine sugar & cinnamon; sprinkle over tortillas. Cut tortillas into 8 wedges & place in single layer on pan. Bake 8-10 minutes or until lightly brown & crisp. Set on cooling rack. [NOTE: Do not spray both sides of tortilla or you won’t be able to get them off the pan.]

Peel, core & chop apples. Slice strawberries & chop kiwi. Place all in small bowl. Zest and juice orange. Add zest, orange juice, brown sugar & apple jelly to fruit mixture. Mix gently. Spoon into bowl & serve with chips.

I have substituted freely in this recipe with great results. I’ve replaced the apple jelly with orange marmalade, replaced the kiwi with ½ raspberries, replaced both kiwi & strawberries with raspberries, skipped the brown sugar & used canned mandarin oranges with OJ & dried orange zest. Tart apples work best.


Mexican Salad
15 oz black beans
2 c corn
½ red pepper, diced
½ green pepper, diced
¼ c olive oil
2 Tbl lime juice
2 Tbl lemon juice
¼ c red wine vinegar
½ tsp honey
½ tsp honey
½ Tbl cumin
1 tsp pepper, black
2 Tbl cilantro, chopped
1 tsp salt
1 dash hot sauce
½ tsp chili powder
1 clove garlic
Combine beans, peppers & corn. Whisk together remaining ingredients. Pour over vegetables & mix well. Chill thoroughly.

Or this one for a twist on Chinese-food-made-Mexican?
Mexican Won Ton
< ¾ lb Ground meat (beef, pork, turkey)
15 oz Black beans, drained
1 pkg TACO seasoning mix
½ lb Shredded cheddar cheese
1 Tbl Garlic powder
Green onions chopped
4 tsp Cayenne pepper
2 pkg Won Ton Wrappers
Sauté ground meat over medium heat until no longer pink. Sprinkle on garlic powder, cayenne and Taco seasoning mix. Stir well. Add drained black beans. Mix thoroughly; remove from heat. When meat mixture has cooled to room temperature, stir in cheese and onions.

TO MAKE WON TON:
Place a teaspoon of the mixture onto the middle of each won ton wrapper. Wet the edges of the wrapper with water, fold the wrappers over to form triangles, and seal the edges, pinching them together. Moisten bottom side of LEFT corner and upper side of RIGHT corner. Fold left corner up toward you, and fold right corner over left; seal together. Fry several won tons at a time in hot oil (375 degrees F) until golden brown. Drain well on paper towels. Serve with fresh Mexican salsa or guacamole. Makes approximately 100 won tons.
 
I assume you're having cake for dessert, but if you want something a little different for the adults how about one of these?

Fresh Fruit Taco
3 Tbl sugar
1 tsp ground cinnamon
4 flour tortillas, 6” size
2 Tbl water
Vegetable cooking spray
1 pkg instant pudding mix (four ½ cup servings)
1 tsp grated lemon peel
1 tsp vanilla extract
1 DOLE Banana, peeled, sliced
1 DOLE Mango, peeled, sliced
1 DOLE Kiwi fruit, peeled, sliced
½ c DOLE Raspberries


Combine sugar and cinnamon. Brush tortillas lightly with water. Sprinkle sugar mixture over both sides of tortillas.

Spray large custard cups with vegetable cooking spray. Gently press tortillas into cups. Bake at 400° F., 10 minutes or until lightly browned. Cool.

Prepare pudding according to package directions. Stir lemon peel and vanilla into pudding.

Combine banana, mango, kiwi and raspberries, in small bowl.

Arrange tortilla shells on dessert plates. Spoon about ½ cup pudding into each shell. Spoon fruit onto pudding in shells.

I make this with sugar-free vanilla since I'm diabetic. I love this recipe! I will admit that I freely change the fruits to whatever is available & have even used canned instead of fresh. ;)

Chocolate Chimichangas

1 Chunk chocolate
choco spread like Nutella
Flour tortillas
Cinnamon & sugar mix

Roll chunks of chocolate in flour tortillas. Seal edges with water like when frying a wonton and deep fry until tortilla is crispy and blistered. Drain; then roll in a cinnamon and sugar mix. Can be served with or without ice cream and you decide on the topping.
 
Pirates mate~ thank you. People will probably be both sitting and standing. Tortilla soup is my Favorite. Thank you. I was thinking of a mexican pasta dish also. ANd the kids love those 7 layer dips. Thanks for your help.
 

For my SIL's graduation party, we did 7-layer dip in margarita glasses! Very pretty on the table!

If you've got a fondue pot or a small crock pot - you might do queso to dip in.

For quick 'n easy fajita meat, go to Sam's and get the mequite grilled chicken breasts in the frozen meat section. Then just slice it, warm it through and cook up your veggies!
 
Burrito Pie - tried this one recently (kinda like a mexican lasagna) and DH says it's a winner!

Note: recipe says it's "hot", so I substituted medium salsa for the taco sauce as other reviewers suggested. Salsa made it on the "safe" side - still tasty, but can easily be jazzed up with spicier salsa topping for those that "like it hot".

Freezes beautifully.

Wow, I forgot about this one. Can y'all tell I LOVE allrecipes.com? LOL T'was good, but a little more time-consuming (stuffing the shells) than the Burrito Pie ;)

Tacos in Pasta Shells Did an ingredient search for large shells, wanted something different from Italian. Once again, I used (more) salsa instead of taco sauce ('cos I usually have it in the cupboard).

A quick one to throw together for appetizers...

packet of taco seasoning
ground beef
salsa (optional)
shredded cheddar
thinly sliced tomatoes or diced (optional)
diced onions (optional)
ready-made pizza crust or the pillsbury one

Layer everything on (as much or a little as you want) and cut into small pieces.

**Tip tho - be sure that the meat mixture is drained.
