Favorite July 4th Side Dishes?

With July 4th approaching, I was wondering if any DISers have great BBQ side dish recipes, like potato salad, pasta salad, etc...? Even favorite drink recipes (alcoholic/non-alcoholic) are welcome, too! Help me think of something good to bring to the party!

Here's one I really like:

ICED TEA SANGRIA WITH FRESH FRUIT

4 cups water
2 tea bags (black tea, fruit flavored if desired)
4 to 5 tablespoons sugar

1 peach or apple, peeled, pitted or seeded, chopped
4 large strawberries, hulled, halved
1 orange, all peel and white pith removed, cut into 3/4-inch pieces
1 cup dry red wine
Ice cubes

Bring water to boil in medium saucepan. Remove from heat. Add tea bags; steep 3 minutes. Remove tea bags; pour tea into pitcher. Add sugar to taste and stir until sugar dissolves. Cool. (Can be made 1 day ahead. Cover and refrigerate.)

Mix fruit in bowl. Divide among four 16-ounce glasses. Pour 1/4 cup wine, then 1 cup tea into each glass. Fill glasses with ice cubes and serve.
 
How about:

Red, White and Bleu Potato Salad

Ingredients
2 1/2 pounds small red potatoes, cooked and cubed
3/4 cup chopped green onion
3/4 cup chopped celery
3/4 cup fat-free sour cream
1/4 cup reduced-fat mayonnaise
2 tablespoons minced fresh parsley
1 tablespoon white wine vinegar or cider vinegar
1 1/2 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon celery seed
1/2 cup crumbled bleu cheese


Directions
1.) In a large bowl, toss the potatoes, onions and celery. In a small bowl, combine the sour cream, mayonnaise, parsley, vinegar, salt, pepper and celery seed. Pour over potato mixture; toss to coat. Sprinkle with blue cheese.
2.) Cover and refrigerate for several hours before serving.

Garnish with halved cherry tomatoes! Yummy!
 
Break up some lettuce in the bottom of a large, clear glass bowl.
Sprinkle with some sugar, salt, and pepper.
Place some sliced hard-boiled eggs on the lettuce, setting some upright against the outside of the bowl, showing through.
Sprinkle generously with salt.
Break up some more lettuce in a layer on top of eggs.
Pour a bag of frozen (thawed) baby peas on top of lettuce.
Crumble cooked bacon pieces on top of peas.
Put shredded Swiss cheese on top of bacon.
Spread Miracle Whip on top of cheese and out to the rim of the bowl, sealing the edge.
Place plastic wrap on top of entire bowl and place in fridge 24 hrs or overnight.

When ready to serve, carefully mix entire contents of bowl with salad spoons till well mixed together.

YUM!!!
 

Always a huge hit:

Macaroni Fruit Salad

1/2 lb. Acine De Pepe Macaroni (cooked & drained)
1/2 cup sugar
1 egg (beaten)
1 tsp. lemon juice
1 tbsp. flour
1/2 cup pineapple juice (use the juice from the canned pineapple)
1/4 tsp. salt
2 cans mandarin oranges (drained)
1 can crushed pineapple (drained)
1 can chunk pineapple (drained)
8 oz. Cool Whip

1. Cook macaroni, drain and cool.

2. To make the "dressing" - combine sugar, flour and salt. Stir in pineapple juice and lemon juice. Add beaten egg. Cook until thick - and then cool.

3. Combine macaroni, dressing and drained fruit.

4. Mix in 8 oz. container of Cool Whip.

Cover and refrigerate.

Easy and totally yummy!:D
 
Grab a bag of Lays Potato Chips

Open and pour into dish

Enjoy!

I make ice cubes too! :p

Obviously, getting married was a good thing for me!

These sound yummy!!!!! I am getting some bleu cheese tomorrow (Canada Day here, like your Fourth) for that salad!!!

I found a recipe for a easy and pretty 'jello' cake perfect for the 4th of July!

Purchase the following:

1 box yellow or white cake mix
1 box strawberry jello
1 quart strawberries
1 pint blueberries
1 tub cool whip

Follow the directions on the cake mix and let cool.
Make jello to directions.
Take toothpicks and poke holes in the cake...all along the top and pour the jello along the top of the cake. Put in the refrigerator and let cool.
Clean fruit - slice strawberries.
Once cake has cooled, put on a platter or cake plate, slather with cool whip and make a flag by alternating strawberry slices for the stripes and using blueberries for the stars on the flag.
Place remaining strawberry slices along the outside of the flag as garnish.

Believe me....I AM NO BAKER...a boxed cake is about as good as it gets! But this is always a big hit...a modification of strawberry shortcake that is beautiful for the 4th.

Those shots are good! I had a couple of them on my birthday.

Coronation Chicken Salad, while not the most patriotic thing in the world, is really good. This is also not really a traditional recipe, but I like it -even my picky non-fruit-or-vegetable-eating-boyfriend likes it. We always have it for the 4th. It's good with a nice, tall IPA or lemonade (maybe with a little mint?).

4 boneless, skinless chicken breasts
2 celery stalks, trimmed and finely sliced
1/2 ripe honeydew or other sweet melon
1/2 seedless grapes, sliced
1/2 cup mayonaise (the full-fat stuff is better, but any kind is fine)
2 tbps. mild curry paste
Fresh basil or mint (if you want)

1. Poach the chicken -- I usually do it in chicken broth as skinless breasts don't always have too much flavor.
2. When cool enough to handle, dice and mix with the melon, celery and grapes.
3. Fold in the mayo and curry paste.
4. Finely chop or chiffonade the mint or basil, if you'd like, and throw it over the top of the salad.

Serve on lettuce leaves or just in a big bowl. It's so good, and you can add almost anything you'd like. My mom leaves out the basil or mint and sometimes puts a little cool whip in with the mayo. She also uses curry powder instead of paste. Sliced almonds go really well in here, too.
 
BEAN SALAD

15oz. can wax beans
15oz. can red kidney beans
15oz. can chick peas
1 box frozen green beans. cooked
1 med. onion, chopped
1 green pepper, chopped

DRESSING:
1/2 cup sugar
2/3 cup red wine vinegar
1/2 cup oil (I use olive oil)
1 tsp. salt
1 tsp. pepper
1/2 tsp. worcestershire sauce

Drain and rinse beans and peas mix together in a large bowl with onions and pepper. Mix all dressing ingredients together and pour oer bean mixture. Let marinate for at least 24 hrs., stirring a few times.

I made this on a Wednesday night and served it Saturday.. IT WAS AWESOME!!!
