Favorite cake recipe for a crowd

Personally, I'd go to Costco and get one of there sheetcakes and also pick up some cookies and brownies to round things out. You could get all that for under $25. It's great stuff and would save lots of time. Personally I wouldn't enjoy pineapple upside down cake. To me it just isn't dessert if it doesn't have chocolate :teeth: .
 
There's a recipe for Triple Decker Strawberry Cake on pg. 67 of The Cake Mix Doctor by Anne Byrn that got rave reviews when I made it. I made the cake as a double layer, used Duncan Hines Cream Cheese Frosting, and put a layer of strawberry slices in between the layers (on top of the frosting). For a larger crowd, you could double the recipe and make two layers that are 9" x 13" each.

Or do a cake like a three layers with one layer vanilla, one choclate and maybe one something like strawberry or a special flavor

Finally, fold in the cream cheese mixture.

In a container place the Cool Whip mixture on the bottom. Add a layer of cookies, than Coool Whip, than cookies and keep alternating the layers.

Refrigerate 24 hours befor serving.

As for containers... I have seen this in a plastic flower pot, and than they put plastic flowers in the center and you can even stick gummie worms half in half out.

For a big family picnic, I went to K-Mart and picked up a large plastic wheelbarrow that had a shovel, rake, and hoe with it, in the toy department.
I also added the gummie worms, it was a big hit.

I had this it was the best.. We call it Slug
 

My inlaws are coming tomorrow and I was thinking about making the cherry dump cake. However, they do not like nuts. Have you made the cake without the nuts, what can I do for the topping instead, any suggestions?

I have made Cherry Dump Cake many times, it's a staple in our family! You would probably be fine to leave off the nuts...the butter and cake mix will bake to a nice brown color, and the cherries will bubble up, so I don't think the nuts will be missed visually or otherwise.

When I have a big crowd I make my whipped cream peach/raspberry cake.

Just make some large rectangular lemon cake mix cakes, when they are cool slice along the middle to make 2 layers...

In the middle use real whipped cream, fresh sliced peaches and raspberries....

ice the whole cake with whipped cream, then on the top arrange peach slices, raspberries... etc...

so easy and everyone loves it.

I love this cake. I've only had it with herseys chocolate syrup instead of carmel. I'll have to try it that way. To make it for a crowd that big, I have a 15x19 (or something like that) cake pan that takes 2 boxes of cake mix. I'd probably double the recipe and do it that way. It only takes a small piece for each person because it's SWEET!

This isn't a traditional cake but we use it for birthday celebrations anyway because my DD's & everyone else love's it.

--Use 9 X 13 pan (or larger one if you have it)

--Layer bottom of pan with graham crackers

--Next layer is 1 box of instant vanilla pudding mixed with 8 oz. cream cheese (softened) & 1 cup milk. Mix until very smooth & pour on graham crackers

--Add another layer of graham crackers on top of vanilla pudding mixture

--Next layer use 1 box instant chocolate pudding, 8 oz. cream cheese & 1 cup milk. Mix smooth & pour on graham crackers

--Add another layer of graham crackers on top of chocolate pudding mixture

--Last layer is 8-12 oz. of whipped topping smoothed over top

--Drizzle with chocolate syrup before serving.

Must be kept in refrigerator.

I'm sure whatever you decide to make will be delicious! :flower:

Chocolate Eclair Cake goes over BIG time and it's similar to MELSMICE's recipe but doesn't have the cream cheese:

Chocolate Eclair Cake

2 (3.5 ounce) pkgs. instant vanilla pudding
1 (8 oz) container Cool Whip (or similar) thawed
3 cups milk
1 (16 oz.) pkg. graham cracker squares
1 can pourable chocolate frosting (or 2 cans, use to your liking)

In a medium bowl thoroughly blend the pudding mix, whipped topping and milk.

Arrange a single layer of graham cracker squares in the botttom of a 13 x 9 baking pan.

Evenly spread half of the pudding mixture over the crackers. Top with another layer of crackers and the remaining pudding mixture. Top with a final layer of graham crackers.

Spread the frosting over the whole cake up to the edges of the pan. Cover and chill for at least 4 hours before serving.

Texas Sheet Cake
From Southern Living


Make the icing 5 minutes before taking the cake out of the oven, and spread it on the hot cake.

2 cups sugar
2 cups all-purpose flour
1/2 cup butter or margarine
1/2 cup shortening
1/4 cup unsweetened cocoa
1 cup water
1/2 cup buttermilk
2 large eggs, lightly beaten
1 teaspoon baking soda
1 teaspoon vanilla
Chocolate Icing

Sift together sugar and flour in a large bowl; set aside.
Combine butter and next 3 ingredients in a medium saucepan over medium-high heat. Bring to a boil, stirring constantly, until butter and shortening melt. Remove from heat, and pour over sugar mixture, stirring until dissolved. Cool slightly.

Stir in buttermilk and next 3 ingredients. Pour into a greased and lightly floured 15- x 10-inch jellyroll pan.

Bake at 400° for 20 minutes. (Cake will have a fudgelike texture.) Spread warm cake with Chocolate Icing.

Yield: Makes 12 to 15 servings

This recipe goes with Texas Sheet Cake

1/2 cup butter or margarine
1/4 cup unsweetened cocoa
1/3 cup milk
1 (16-ounce) package powdered sugar
1 teaspoon vanilla
1 cup chopped pecans

Combine butter, cocoa, and milk in medium saucepan. Cook over low heat 5 minutes or until margarine melts. Bring to a boil over medium heat. Remove from heat, and stir in sugar, vanilla, and pecans. Beat at medium speed with an electric mixer until smooth and sugar dissolves.


Yield: Makes 4 cups
