I'm hoping one of you experts can help n me figure out the best plan of attack for my family in regards to FP+.

We are a family of 7 (5 adults, 1 four year old, and 1 two year old). For some of the rides we wants to do the 4 year old is tall enough, but we would of course have to do a rider switch so someone could stay with the littlest one.

Do I book 6 fastpasses at the same time (example splash mountain)? Or, would it be better to split the group up into different times? How many people can get the rider switch?

I'm confused.... help please :)

3 members of your group can ride on the "swap" via the FP line.

So, book 3 people on one height restricted ride and the other 3 ride on the swap. You can split up your FPs this way and potentially ride 6 height restricted rides each day.
