Today is the first day I've been able to book Fastpass+ reservations, because it's 60 days in advance, and now I'm all booked up! I'm hoping that I won't need to adhere to them if the end of April isn't a busy week.

This is the first year in all of the trips I've ever taken to WDW where I've made reservations for dining and Fastpass+ attractions. Things have changed so much since the last time I was there. I think it'll be different for me, knowing I have to be at a certain place at a certain time, but at the same time, I'm the kind of person who likes to wing it and do stuff based on where I am at any given moment. For instance, if I'm at Epcot, the first thing I normally do is ride Spaceship Earth after I pass through the gates - it's kind of a tradition. If it's not crowded, I sometimes like to ride it 2 or 3 times before moving on to something else. Usually if you ask the CM if you can go around again, they'll usually say yes, if it's not too busy. Then, after that, I'll spontaneously move on to something else that catches my attention, and I won't need a Fastpass+ reservation for whatever I'm doing.

It's all very exciting to say the least. In 60 days I'll be on my way, I can hardly believe it.

Your plan can work. But must depends on what time you plan to walk in the gates.
If it's at rope drop, then what you usually do works. If it's more like 10:00 AM, then you'll probably be in for a surprise at just how long the line for SE can be now, at some times of the day.
But don't fall in to the trap that FP+ means automatically you are locked in to things. You aren't, even when it's busy (and late April probably will be fairly busy) there are ways to be flexible. We move FP around all the time

Totally understood. Hoping the crowds will be minimal. It's just after Spring Break - I purposely booked it for this week because it was after. So it shouldn't be more crowded than what I've experienced in the past. Generally I think late April can be least- to medium crowds.

As Angi said it's entirely possible to be spontaneous and move the FPs around, heck I've been known to book one while standing in a stand by line, head over to the new FP and find the line not as long as the wait for my FP, hop in that line, cancel my FP and book another one for another ride, rinse and repeat. I've gone whole days doing this and end up not using a single FP. I've also been when the line for SSE can be 45 min. to a hour long, so there is that.

One thing I have to remember is that your FP window is an hour long. You don't have to be there right when the window opens! So if you have FP for two attractions that are next to each other (Splash & BTMRR, for instance), you can ride the first near the end of the window and the second right after, at the start of that window. Gives you the flexibility to do other things before, between, and after your FP windows.
