Fast passes for optional day - can they be changed at the last minute?

So, on our optional/break day, we're planning a late breakfast at 1900 Park Fare. Given the vicinity to MK, I'm thinking of booking fast passes. However, if midweek, we decide we've done enough of MK, would it be possible to cancel all three and book three at a different park that we may want to visit instead?

Of course.
You can cancel FPs anytime.
(And, if you cancel all three at one park, you can THEN book up to three new ones at ANY park.)

However... by waiting to book NEW FPs on (or near) the same date/time you want to USE them
will limit the availability of the new FPs.

Yep, but I would vote for going somewhere you don't need FPs for though, like SWGE (because it doesn't have FP) or World Showcase, since the FP options will be pretty limited by the time you go to rebook them. FP availability day of would probably be better than the day before.
