if we go with another couple that are also season passholders as we are and we select three fastpasses and include them, does that preclude them from getting their own fast passes in addition to the ones that we selected? Or if they want to select their own, do we have to cancel the selections we made for them? Thanks

Yes, it does. If you select their FP+ for them, they will not be able to select any additional FP+ until the original ones are either used or expired. If they want FP+ for attractions different than what you've selected for them, they will need to cancel the ones that you made.
